Description
An Estate Chardonnay comes from a unique section in the south block of Seven Springs. Seven Springs Chardonnay underwent whole cluster pressing before being racked to once-used French barriques and Stockinger puncheons (500L)for fermentation. The wine remained in barrel for 12 months before being racked to tank. The wine completed élevage in tank for another 6 monthsbefore bottling. The Seven Springs Chardonnay was
cold stabilized and lightly fined with bentonite clay before bottling.
A lightly-oaked Chardonnay, nutty and gently toasty notes atop generous tropical fruit, with a hint of cooler orchard fruits. In the mouth it is expansive and ripe, but far from over-blown, the juiciness of the acidity and a salty lick of minerality off-setting the creamy depth of fruit
