Domaine Bernard Defaix farms its Chablis vines organically on clay-limestone soils rich in Kimmeridgian fossils, then vinifies this cuvée in stainless steel to capture precision and freshness. The 2023 Chablis is bright and linear, with notes of lime, grapefruit, green apple and white blossom over a clear saline backbone. Beautiful!!!
