Description
At Pax Wines winemaking is approached holistically. This is done by taking care to use only grapes that are grown without the use of chemicals and by hand making their wines with as little intervention as possible. As a result, all of their wines are crushed by foot and hand, and fermented using only natural yeasts.A red wine made up of 95% Grenache and 5% Syrah. Intensely red fruit driven with wild aromas of white flowers, game, forest floor and tiny red berries. The palate is medium-full with zesty red fruit. With air the fruit becomes supple and heady and evokes preserves and baked summer fruits. This 2015 has a vivid purity of flavor that captures the wildness of Grenache in a low yielding vintage.
