A very interesting white wine, definitely one for a Sherry lover!
With a few vintages of his Palomino Fino-based blend from Bierzo under his belt, the
ever curious Mario Rovira set out to better understand the historical
vinification of this Andalusian grape variety. Teaming up with Bodegas Delgado
Zuleta in Jerez, Mario created an experimental project of four botas of Palomino Fino,
sourced from the albariza soils of the Pago de Balbaina, to better understand how to
craft unfortified wines that develop under a layer of flor.
This is made from 100% Palomino, using indigenous grapes and natural fermentation.
This wine spends 7months in former Manzanilla barrel with 4 months under flor.

Notes of hazelnut and black olive on the nose, which follows through on the
palate, which has a much more restrained mouthfeel; saline, mineral-driven and a
little bit creamy.
Great with olives and salted, smoked almonds.
