Boann Single Pot Still Irish Whiskey PX Cask (700ml, 47% ABV) is frequently characterized as a "Sherry Bomb," a profile achieved by initially maturing the spirit in Oloroso Sherry Hogsheads before finishing it in rare, 60-year-old vintage Pedro Ximénez (PX) Solera casks.

The whiskey has a rich, syrupy mouthfeel that balances sweetness and savory elements. Key tasting notes include honey, dark chocolate, walnut, and dried fruits like dates or black cherries, with a prickle of cracked white pepper and baking spices like cinnamon and clove.

The Old Bushmills distillery in Northern Ireland is the world's oldest licensed whiskey producer, granted a license to distil whisky in 1608. The modern iteration of the distillery was built in 1885, following a fire. Old Bushmills was bought by the Irish Distillers group in 1971, giving them a full monopoly on the production of whiskey on the island, lasting until 1987 when Cooley was opened by the Teeling family.

This whiskey was distilled on 1st March 2011 and recasked on 19th December 2017 before being bottled in 2020. It has been finished in a Banyuls French Wine cask.

The 2012 Pomerol Cask is a limited edition rare 54.2% ABV Cask Strength Single Malt Irish Whiskey, distilled in 2012 , matured for over 6 years in Oloroso Sherry and Bourbon Casks, then recasked in April 2018 and matured for a further 4 years in 6 Pomerol casks.

Dingle Distillery continues to produce some of the most intriguing whiskies in Ireland. This limited-edition single pot still Irish whiskey using a traditional mash bill of malted and unmalted barley, distilled in copper pot stills before ageing for 11 years. Their use of Pedro Ximénez sherry casks makes this something special. The rich sherry cask flavours add a dried fruit sweetness and richness to the pot still spice character.

On the nose, rich aromas of cooked dates and raisins intertwine with burnt caramel and maple syrup. The palate is velvety and mouth-coating, unfolding layers of sultanas and chocolate coated cherries balanced by a drizzle of golden honey. The finish is lingering and warming with charred oak and classic pot still spices of clove and ginger, lifted by a bright hint of orange zest.

On the nose, aromas of vanilla pod and caramel lead the way, layered with notes of fruit cake, toasted oak, and hints of ripe orchard fruits. The palate reveals caramelised fruit intertwined with warming oak spices, supported by soft malt character and creamy vanilla that carries throughout the whiskey.

Dingle Madeira Malvasia Cask 13 Year Old Single Malt Irish Whiskey 70cl 51.3% is a remarkable limited-edition release drawn from some of the earliest whiskey stocks laid down at Dingle Distillery in County Kerry. Matured initially in Bourbon casks before receiving an extended 18-month finish in Madeira Malvasia casks, this 13-year-old Single Malt showcases a level of age and maturity rarely seen from Dingle.

Created by Head of Maturation Paddy Foley, just 1,585 bottles have been produced worldwide. The Madeira Malvasia finish brings rich fruit and sweetness to the mature Single Malt, with honey, sun-dried fruit and candied citrus on the nose alongside toffee and vanilla. The palate develops into sticky dates, dark chocolate and spiced oak, with clove and cinnamon adding warmth and complexity.

The 10 year age statement from Drumshanbo.  Aged in old kentucky Bourbon casks and lesser known Accacia barrels. Really creamy texture from the Barra oats. Nice caramel notes, butterscotch.

Glendalough Double Barrel Irish Whiskey is a single grain Irish whiskey, initially matured in American bourbon barrels before enjoying a finishing period of six months in Spanish Oloroso Sherry casks. This comes bottled at 42% ABV, brought down to this strength by Wicklow mountain water. A rather tasty release presented by Glendalough, rich in vanilla, caramel, Christmas spices and dried fruit notes.

Spot Whiskey celebrated its 100th anniversary in 2025 with a limited edition 10-year-old release of its Green Spot Single Pot Still Irish whiskey! The Spot range gets its name from the founder, Mitchell & Son's practice of painting different coloured spots on casks to mark different ages, with Green Spot first advertised in The Irish Times in 1925. Matured for 10 years in a selection of bourbon and sherry casks and bottled at a satisfying 46% ABV, this whiskey boasts generous layers of orchard fruits, warming spices, and sweet vanilla.

The team at Ireland's Killowen distillery (Newry) sourced this Irish single malt from Great Northern Distillery and treated it to a decadent cask finish. Initially aged in bourbon barrels, the whisky was then divided between a selection of Killowen’s own dark rum casks and a host of Pedro Ximénez sherry casks, imparting a medley of dried fruits, tropical coconut, and vanilla.

This limited-edition release is a superb example of how careful cask selection can shape and elevate Irish whiskey. Distilled at Cooley in 2009, the whiskey began its maturation in a first-fill Bourbon cask, where it spent over nine years developing a smooth and elegant foundation. It was then transferred into an Amontillado Sherry cask for almost three years, adding layers of nuttiness, dried fruit, and complexity. A final maturation of nearly three years in a Pedro Ximénez Sherry cask brought exceptional richness, sweetness, and depth to the whiskey.

The result is a wonderfully expressive 15-year-old Single Grain Irish Whiskey with luxurious sherry influence throughout. Rich aromas of sweet sherry, almonds, dark fruits, rolling tobacco, and leather lead into a palate bursting with juicy raisins, demerara sugar, prunes, and an intensely syrupy texture balanced by lively spice. The finish is long and rewarding, revealing layers of rich dark fruits and warming Christmas spices.

The 2026 release looks to balance Midleton's signature elegance with a richer, sweeter profile. Expect bright Irish orchard fruit up front, creamy toffee and vanilla through the middle, and a lingering pot still spice finish.
